Einkorn is the oldest wheat known. It imparts a deep, nutty and toasty essence and a good source of protein, iron, dietary fiber.
We use organic whole einkorn wheat flour and local Hold Out brewery spent to get a wonderful unique local sourdough flavor, combined with beautiful sweetness from added figs. Using a method that requires 18 hours of fermentation, the bread develops strong flavors that come together perfectly once baked.
